2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 cup unsalted butter, cold and cubed

1 cup sharp cheddar cheese, shredded

1/4 cup fresh chives, chopped

3/4 cup buttermilk

1 large egg (for egg wash)

Extra chives and cheese for sprinkling (optional)

Instructions
 

Preheat Your Oven: Preheat the oven to 450°F (232°C).

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Incorporate Butter: Use a pastry cutter or your fingers to cut in the cold, cubed butter until the mixture resembles coarse crumbs.

        Add Cheese and Chives: Stir in the shredded cheddar cheese and chopped chives, ensuring they are evenly distributed throughout the flour mixture.

          Combine with Buttermilk: Pour in the buttermilk and mix until just combined. Be careful not to overmix; the dough should be slightly sticky.

            Shape the Dough: Turn the dough out onto a floured surface and gently knead it 2-3 times to bring it together. Pat the dough into a circle about 1 inch thick.

              Cut Biscuits: Use a floured biscuit cutter (or a glass) to cut out biscuits, placing them closely together in a greased cast-iron skillet or baking sheet.

                Egg Wash: In a small bowl, beat the egg and brush it over the tops of the biscuits for a golden finish. If desired, sprinkle additional shredded cheese and chopped chives on top.
