1 lb (450g) flank steak, thinly sliced against the grain

2 tablespoons vegetable oil

1 large onion, sliced

1 bell pepper (red or green), sliced

3 cloves garlic, minced

1 tablespoon ginger, minced

1/4 cup soy sauce

1 tablespoon oyster sauce

1 tablespoon rice vinegar

1 tablespoon cornstarch

1 teaspoon sugar

1 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional, for heat)

4 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Beef:

    - In a bowl, combine the sliced flank steak, soy sauce, oyster sauce, rice vinegar, cornstarch, sugar, and black pepper. Mix well, ensuring the beef is evenly coated. Let it marinate for at least 30 minutes at room temperature or up to 2 hours in the fridge for deeper flavor.

      Prepare the Vegetables:

        - While the beef is marinating, slice the onion and bell pepper. Mince the garlic and ginger. Set aside.

          Heat the Oil:

            - In a large skillet or wok, heat the vegetable oil over high heat. Make sure the oil is hot enough that it shimmers.

              Sizzle the Beef:

                - Add the marinated steak to the hot oil in a single layer, without overcrowding. Sizzle for about 2-3 minutes per side until browned and slightly crispy. Remove the steak from the skillet and set aside.

                  Stir-Fry the Vegetables:

                    - In the same skillet, add a little more oil if needed. Stir in the sliced onions and bell peppers. Cook for about 3-4 minutes until the vegetables start to soften.

                      Combine Everything:

                        - Add the minced garlic and ginger to the vegetables in the skillet, stirring constantly for about 1 minute until fragrant. Return the cooked steak to the skillet, tossing everything together.

                          Sauce it Up:

                            - If desired, sprinkle in red pepper flakes for an extra kick. Stir-fry everything for another 1-2 minutes, allowing the sauce to cling to the beef and vegetables.

                              Serve:

                                - Remove from heat and transfer to a serving platter. Garnish with sliced green onions and a sprinkle of sesame seeds. Serve immediately while sizzling hot over steamed rice or noodles.
