1 pound ground turkey

1 medium zucchini, grated and excess moisture squeezed out

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1 clove garlic, minced

1 large egg

1 teaspoon dried Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup marinara sauce (for serving)

Prepare the Zucchini: Start by washing the zucchini. Grate it using a box grater or a food processor. Once grated, place the zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This will prevent your meatballs from being too wet.

    Mix Ingredients: In a large bowl, combine the ground turkey, grated zucchini, breadcrumbs, Parmesan cheese, parsley, minced garlic, egg, Italian seasoning, salt, and pepper. Using your hands, gently mix until just combined. Be careful not to overmix, as this can make the meatballs dense.

      Shape Meatballs: Using your hands, form the mixture into meatballs about 1.5 inches in diameter. You should get approximately 16-18 meatballs, depending on the size.

        Heat the Oil: In a large skillet, add a splash of olive oil and heat over medium heat.

          Cook Meatballs: Once the oil is hot, add the meatballs to the skillet in a single layer. Cook for about 6-7 minutes on each side, or until they are golden brown and cooked through. If you have a lot of meatballs, consider cooking them in batches to avoid overcrowding the pan.

            Simmer in Marinara: After browning, reduce heat to low and pour the marinara sauce over the meatballs. Cover and let them simmer for about 5 minutes to heat through and absorb flavor.
