Shrimp Skewers with Mango Salsa

For the Shrimp Skewers:

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

Juice of 1 lime

8 wooden skewers (soaked in water for 30 minutes)

For the Mango Salsa:

1 ripe mango, diced

1/2 red bell pepper, diced

1/4 red onion, finely chopped

1 jalapeño, seeded and finely chopped (optional for heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper, to taste

Prepare the Shrimp Marinade:

    In a bowl, whisk together olive oil, garlic, smoked paprika, cumin, cayenne pepper, lime juice, salt, and pepper. Add the shrimp to the marinade and toss to coat evenly. Let marinate in the refrigerator for at least 30 minutes.

      Make the Mango Salsa:

        In a separate bowl, combine diced mango, red bell pepper, red onion, jalapeño (if using), cilantro, lime juice, salt, and pepper. Gently mix to combine and set aside to allow the flavors to meld.

          Assemble the Skewers:

            Preheat your grill to medium-high heat. Thread the marinated shrimp onto the soaked wooden skewers, about 4-5 shrimp per skewer.

              Grill the Skewers:

                Place the shrimp skewers on the grill and cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque. Avoid overcooking to ensure they remain tender.

                  Serve:

                    Remove the skewers from the grill and let them rest for a minute. Serve warm with a generous scoop of mango salsa on the side and enjoy your tropical feast!
