Ingredients

For the Shrimp Filling:

1 lb large shrimp, peeled and deveined

1 tablespoon olive oil

2 cloves garlic, minced

1 red bell pepper, diced

1/2 cup green onions, chopped

1 tablespoon soy sauce

1 teaspoon lime juice

Salt and pepper to taste

For the Pineapple Glaze:

1 cup fresh pineapple, diced

1/4 cup honey

1 tablespoon soy sauce

1 tablespoon rice vinegar

1/2 teaspoon grated fresh ginger

1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)

For Assembly:

1 head of butter lettuce or romaine lettuce, leaves separated

Fresh cilantro leaves for garnish

Lime wedges for serving

Instructions

Prepare the Pineapple Glaze: In a small saucepan over medium heat, combine the diced pineapple, honey, soy sauce, rice vinegar, and grated ginger. Bring to a simmer and cook for about 5 minutes, allowing the flavors to meld. Add the cornstarch mixture and stir until the glaze thickens. Remove from heat and set aside.

Cook the Shrimp Filling: In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the shrimp and cook for 2-3 minutes, stirring occasionally until they turn pink and opaque.

Add Vegetables and Seasoning: Add the diced red bell pepper and green onions to the shrimp. Stir and cook for another 2 minutes until the peppers are just tender. Drizzle with soy sauce and lime juice, and season with salt and pepper to taste.

Assemble the Lettuce Wraps: Lay out the butter or romaine lettuce leaves on a serving platter. Spoon a generous amount of the shrimp filling onto each leaf. Drizzle the pineapple glaze over the top.

Garnish and Serve: Finish by garnishing with fresh cilantro leaves. Serve the lettuce wraps with lime wedges on the side for an extra citrusy kick.
