1 lb large shrimp, peeled and deveined

4 cups sweet corn (fresh, frozen, or canned)

4 cups low-sodium chicken broth

1 medium onion, diced

2 cloves garlic, minced

2 medium potatoes, peeled and diced

1 cup heavy cream

1 cup whole milk

3 tablespoons butter

1 teaspoon smoked paprika

1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics: In a large pot or Dutch oven, melt the butter over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional 1-2 minutes until fragrant.

    Cook the Potatoes: Add the diced potatoes to the pot. Pour in the chicken broth and bring to a boil. Reduce the heat and simmer until the potatoes are tender, about 10-12 minutes.

      Add Corn and Seasoning: Stir in the sweet corn, smoked paprika, thyme, salt, and pepper. Allow the mixture to simmer for another 5 minutes.
