For the Salmon:

4 salmon fillets (about 6 ounces each)

1/4 cup coconut milk

2 tablespoons red curry paste

1 tablespoon fish sauce

1 tablespoon brown sugar

Juice of 1 lime

2 cloves garlic, minced

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

For the Sweet Potatoes:

2 large sweet potatoes, peeled and cubed

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper to taste

Optional Garnishes:

Chopped peanuts

Lime wedges

Sliced green onions

Preheat the Oven:

    Preheat your oven to 425°F (220°C).

      Prepare the Sweet Potatoes:

        In a large bowl, combine the cubed sweet potatoes with olive oil, ground cumin, paprika, salt, and pepper. Toss until the sweet potatoes are well-coated with the oil and spices.

          Arrange on the Sheet Pan:

            Spread the seasoned sweet potatoes in an even layer on a large rimmed baking sheet. Bake for 15 minutes in the preheated oven.

              Make the Salmon Marinade:

                In a medium bowl, whisk together coconut milk, red curry paste, fish sauce, brown sugar, lime juice, minced garlic, salt, and pepper until well combined.

                  Add the Salmon:

                    After the sweet potatoes have baked for 15 minutes, remove the sheet pan from the oven. Push the sweet potatoes to one side of the pan, creating space for the salmon. Place the salmon fillets skin-side down on the pan and brush generously with the Thai marinade.

                      Bake:

                        Return the sheet pan to the oven and bake for an additional 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. If desired, you can broil for the last 2-3 minutes to get a nice caramelization on the salmon.

                          Serve:

                            Once cooked, remove the sheet pan from the oven. Sprinkle with chopped cilantro, and optional garnishes like chopped peanuts and sliced green onions. Serve with lime wedges on the side for extra zest.
