1 lb (450g) Italian sausage (sweet or spicy, your choice)

2 cups bell peppers (mixed colors, sliced)

2 cups zucchini (sliced)

1 cup red onion (sliced)

1 cup cherry tomatoes (halved)

3 cloves garlic (minced)

2 tbsp olive oil

1 tsp dried oregano

1 tsp dried thyme

1/2 tsp smoked paprika

Salt and pepper to taste

Fresh parsley (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 425°F (220°C).

    Prep the Sausage: If your sausage is link-style, slice them into 1-inch pieces. Alternatively, you can leave them whole if preferred.

      Mix the Veggies: In a large mixing bowl, combine the sliced bell peppers, zucchini, red onion, cherry tomatoes, and minced garlic. Drizzle with olive oil and sprinkle oregano, thyme, smoked paprika, salt, and pepper over the top. Toss until everything is well-coated.

        Combine on Sheet Pan: On a large rimmed baking sheet, spread the seasoned veggies evenly. Layer the sausage pieces on top of the veggies.

          Bake: Place the sheet pan in the preheated oven and bake for 25-30 minutes, or until the sausage is browned and cooked through (internal temperature should reach 160°F/70°C) and the veggies are tender.

            Stir Halfway: Halfway through baking, give the pan a gentle toss to ensure even cooking.

              Garnish and Serve: Once cooked, remove from the oven and let it cool slightly. Garnish with fresh parsley before serving.
