1 lb (450g) ground turkey

2 medium sweet potatoes, peeled and diced (about 2 cups)

1 red bell pepper, diced

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon ground cumin

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

2 tablespoons olive oil

1 cup spinach (fresh or baby)

¼ cup feta cheese, crumbled (optional)

Fresh parsley or cilantro for garnish

Prepare the Ingredients: Begin by peeling and dicing the sweet potatoes into small cubes. Dice the red bell pepper and onion, and mince the garlic.

    Sauté the Base: In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing for about 3-4 minutes until the onion becomes translucent.

      Add Sweet Potatoes: Toss in the diced sweet potatoes and cook for around 5-7 minutes, stirring occasionally, until they start to soften.

        Cook the Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook for about 5-7 minutes until the turkey is browned.

          Season the Mixture: Sprinkle in the smoked paprika, thyme, cumin, salt, and black pepper. Stir well to combine the spices evenly with the turkey and sweet potatoes.

            Incorporate Vegetables: Add the diced red bell pepper to the skillet, cooking for an additional 3-4 minutes until everything is heated through and veggies are tender.
