Savory Turkey and Quinoa Stuffed Peppers

4 large bell peppers (any color)

1 cup quinoa, rinsed

1 pound ground turkey

1 medium onion, chopped

2 cloves garlic, minced

1 cup diced tomatoes (canned or fresh)

1 cup black beans, drained and rinsed

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder

Salt and pepper to taste

1 cup shredded cheese (cheddar or Mexican blend)

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Quinoa: In a saucepan, combine quinoa and 2 cups of water. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until the water is absorbed. Fluff with a fork and set aside.

      Prepare the Peppers: While the quinoa is cooking, slice the tops off the bell peppers and remove the seeds and membranes. Brush the outside lightly with olive oil and set aside.

        Cook the Turkey: In a large skillet over medium heat, heat a tablespoon of olive oil. Add chopped onion and garlic, sautéing until softened (about 3-4 minutes). Then, add the ground turkey, breaking it apart. Cook until browned (about 5-7 minutes), stirring occasionally.

          Combine Ingredients: Stir in diced tomatoes, black beans, cooked quinoa, cumin, smoked paprika, chili powder, salt, and pepper. Cook for another 2-3 minutes until everything is heated through. Remove from heat.

            Stuff the Peppers: Carefully spoon the turkey and quinoa mixture into each bell pepper, packing it down slightly. Place the stuffed peppers upright in a baking dish.

              Top with Cheese: Sprinkle the shredded cheese generously on top of each stuffed pepper, covering them well.

                Bake: Pour a bit of water into the bottom of the baking dish to help steaming. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly and golden.
