Ingredients

1 lb ground turkey

1 can (15 oz) black beans, rinsed and drained

1 medium onion, diced

1 red bell pepper, diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, with juices

1 cup chicken broth

2 tablespoons chili powder

1 tablespoon cumin

1 teaspoon smoked paprika

1 teaspoon oregano

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon lime juice (freshly squeezed)

Fresh cilantro, chopped (for garnish)

Sour cream and shredded cheese (optional, for serving)

Instructions

Sauté the Vegetables: In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced onion and red bell pepper. Sauté until the vegetables are soft, about 5-7 minutes. Add the minced garlic and cook for an additional 1 minute, until fragrant.

Cook the Turkey: Add the ground turkey to the pot. Cook, breaking it up with a spatula, until browned and cooked through, about 6-8 minutes. Drain any excess fat if necessary.

Add the Spices: Stir in the chili powder, cumin, smoked paprika, oregano, cayenne pepper, salt, and pepper. Mix well to coat the turkey and vegetables in the spices and cook for about 1-2 minutes to toast the spices slightly.

Combine Ingredients: Add the rinsed black beans, diced tomatoes (with juices), and chicken broth to the pot. Stir to combine all ingredients thoroughly.

Simmer: Bring the mixture to a boil. Then reduce the heat to low, cover, and let it simmer for 30-35 minutes, stirring occasionally. This will help the flavors meld together beautifully.

Adjust Flavor: After simmering, taste and adjust seasoning with more salt, pepper, or lime juice if necessary.

Serve: Ladle the chili into bowls and garnish with chopped fresh cilantro. If desired, top with sour cream and shredded cheese for added creaminess and flavor.

Enjoy: Serve the chili hot, accompanied by cornbread or tortilla chips for a complete meal!
