1 lb (450g) boneless, skinless chicken thighs, diced

2 tablespoons vegetable oil

1 tablespoon ginger, freshly grated

3 cloves garlic, minced

1 red bell pepper, sliced

1 cup snap peas, trimmed

1 cup carrots, julienned

1/4 cup creamy peanut butter

1/4 cup low-sodium soy sauce

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon lime juice

1 teaspoon sriracha (adjust to taste)

1/4 cup chopped green onions

1/4 cup chopped cilantro

Salt and pepper to taste

Cooked jasmine or brown rice for serving

Crushed peanuts for garnish

Cook the Chicken: In a large skillet, heat the vegetable oil over medium-high heat. Add the diced chicken thighs, season with salt and pepper, and sauté until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
