Savory Pistachio-Crusted Brie Bites

1 wheel of Brie cheese (about 8 ounces)

1 cup unsalted roasted pistachios, shelled and chopped

1/4 cup honey

1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried rosemary)

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1 package of puff pastry (2 sheets), thawed

1 egg, beaten (for egg wash)

Fresh cranberries or pomegranate seeds (for garnish, optional)

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the pistachio mixture: In a mixing bowl, combine the chopped pistachios, honey, rosemary, sea salt, and black pepper. Mix well until the ingredients are evenly combined.

      Roll out the puff pastry: Unroll the sheets of puff pastry on a lightly floured surface. If needed, roll them out slightly to smooth any creases. Cut each sheet into squares (about 3x3 inches) to create bite-sized pastries.

        Assemble the Brie bites: Place a small piece of Brie cheese (approximately 1 ounce) in the center of each puff pastry square. Top each piece of Brie with 1-2 teaspoons of the pistachio mixture.

          Wrap the Brie: Carefully fold the corners of the pastry over the Brie and pistachio topping, pinching the seams together to seal the bites tightly.

            Egg wash: Brush the tops of the pastry bites with the beaten egg to give them a beautiful golden color when baked.

              Bake: Arrange the Brie bites on the prepared baking sheet and bake in the preheated oven for about 15-20 minutes or until the pastry is golden brown and puffed.
