2 boneless, skinless chicken breasts

1 cup uncooked jasmine rice

2 cups chicken broth (or water)

1/2 cup fresh basil pesto

1 cup cherry tomatoes, halved

1 cup spinach leaves (fresh or thawed frozen)

1 tablespoon olive oil

2 cloves garlic, minced

Salt and pepper to taste

Grated Parmesan cheese for garnish (optional)

Pine nuts for garnish (optional)

Instructions
 

Cook the Rice: In a medium pot, combine the jasmine rice and chicken broth. Bring it to a boil, then reduce the heat, cover, and simmer for about 15 minutes or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.

    Prepare the Chicken: While the rice is cooking, season the chicken breasts with salt and pepper. Heat the olive oil in a large skillet over medium heat.
