1 sheet of puff pastry (thawed)

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

10 oz (280 g) mushrooms, sliced (use a mix like cremini, shiitake, and button)

4 cups fresh spinach, roughly chopped

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

½ cup ricotta cheese

½ cup grated Parmesan cheese

1 large egg

1 tablespoon fresh lemon juice

1 tablespoon breadcrumbs (optional for texture)

Fresh herbs (like parsley or chives) for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

      Cook the Mushrooms: Add the sliced mushrooms to the skillet and cook until they release their moisture and become golden brown, approximately 8-10 minutes. Stir in the chopped spinach, dried thyme, salt, and pepper, cooking until the spinach wilts, about 3-4 minutes. Remove from heat and let the mixture cool.

        Prepare the Filling: In a medium bowl, combine the ricotta cheese, grated Parmesan cheese, egg, and lemon juice. Mix until smooth. Fold in the cooled mushroom and spinach mixture until uniformly combined.
