8 oz (about 2 cups) penne pasta

1 lb Italian sausage (mild or hot, casing removed)

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, diced

1 red bell pepper, diced

1 cup sun-dried tomatoes, chopped (packed in oil)

4 cups fresh spinach

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

Salt and black pepper, to taste

½ cup grated Parmesan cheese

Fresh basil leaves for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Brown the Sausage: In a large skillet over medium heat, add olive oil. Once hot, add the Italian sausage, breaking it apart with a wooden spoon. Cook until browned and fully cooked, about 6-8 minutes. Transfer sausage to a plate and set aside.
