Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 cup unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

1 cup diced ham (preferably smoked or honey-glazed)

3/4 cup buttermilk

1 tablespoon honey (optional, for a touch of sweetness)

1 tablespoon fresh chives, chopped (for garnish)

1 egg, beaten (for egg wash)

Instructions

Preheat the Oven: Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper.

Prepare the Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

Cut in the Butter: Adding the cold, cubed butter to the flour mixture, use a pastry cutter or your fingertips to work the butter into the flour until it resembles coarse crumbs.

Incorporate Cheese and Ham: Gently fold in the shredded cheddar cheese and diced ham, ensuring they are evenly distributed throughout the mixture.

Mix in Wet Ingredients: In a separate bowl, combine the buttermilk and honey (if using). Gradually add this mixture to the dry ingredients, stirring until just combined. Be careful not to overmix; the dough should be slightly sticky.

Shape the Biscuits: Turn the dough out onto a floured surface. Pat it into a rectangle about 1-inch thick. Using a floured biscuit cutter or glass, cut out biscuits and place them on the prepared baking sheet.

Egg Wash: Brush the tops of the biscuits with the beaten egg to give them a golden color when baked.

Bake: Bake in the preheated oven for about 12-15 minutes, or until the biscuits are golden brown and cooked through.

Cool & Serve: Allow the biscuits to cool slightly on a wire rack. Serve warm, garnished with chopped fresh chives.
