Ingredients

6 large eggs

200g feta cheese, crumbled

1 cup cherry tomatoes, halved

1/2 cup spinach, chopped

2 tablespoons olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh parsley or basil for garnish

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Baking Dish: In a medium-sized baking dish, drizzle 1 tablespoon of olive oil. Spread the halved cherry tomatoes evenly across the bottom, then scatter the chopped spinach on top.

Add Feta: Crumble the feta cheese over the tomatoes and spinach, ensuring even coverage.

Season: Sprinkle the oregano, red pepper flakes, salt, and pepper over the feta and vegetables.

Crack the Eggs: Create small wells in the feta and vegetable mixture for the eggs. Crack the eggs into each well, taking care not to break the yolks.

Drizzle with Olive Oil: Drizzle the remaining tablespoon of olive oil over the eggs and season them lightly with salt and pepper.

Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes or until the egg whites are set but the yolks are still slightly runny (or to your desired doneness).

Garnish and Serve: Remove from the oven, let cool for a minute, and then garnish with fresh parsley or basil. Serve warm with crusty bread for dipping.
