Sausage and Cheddar Egg Muffins

6 large eggs

1 cup cooked sausage, crumbled (use your favorite type: pork, turkey, or chicken)

1 cup sharp cheddar cheese, shredded

1/2 cup bell pepper, finely diced (any color)

1/4 cup green onion, sliced

1/4 cup milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

1/4 teaspoon salt

1/2 teaspoon paprika (optional)

Cooking spray or olive oil for greasing

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or a light coat of olive oil to prevent sticking.

    Prepare the Mixture: In a large mixing bowl, crack the eggs and whisk them until well beaten. Add the milk, garlic powder, onion powder, black pepper, salt, and paprika (if using). Whisk until everything is fully combined.

      Add the Ingredients: Stir in the crumbled sausage, shredded cheddar cheese, diced bell pepper, and sliced green onion into the egg mixture. Ensure that all ingredients are evenly distributed throughout the mixture.

        Fill the Muffin Tin: Pour the egg mixture evenly into the greased muffin tin, filling each cup about 3/4 full to allow for rising.

          Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes or until the egg muffins are puffed up and the tops are lightly golden. A toothpick inserted in the center should come out clean.

            Cool and Serve: Once baked, remove the muffin tin from the oven and let it cool for a few minutes. Carefully run a knife around the edges of each muffin before gently popping them out. Serve warm, or let cool completely before storing for future breakfasts.
