Ingredients
  

1/4 cup fresh lemon juice

1/4 cup fresh orange juice

3 tablespoons olive oil

2 tablespoons soy sauce

2 tablespoons honey

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon Dijon mustard

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon fresh parsley, chopped

Salt and pepper to taste

4 salmon fillets (approximately 6 oz each)

Instructions
 

In a medium mixing bowl, combine the fresh lemon juice, fresh orange juice, olive oil, soy sauce, honey, minced garlic, grated ginger, and Dijon mustard. Whisk together until the mixture is well blended.

    Add the chopped dill and parsley to the marinade, and season with salt and pepper to taste. Mix thoroughly, allowing the herbs to infuse their flavor into the marinade.

      Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour the marinade over the salmon, ensuring each fillet is evenly coated. If using a dish, cover with plastic wrap or place the bag in the refrigerator.

        Marinate the salmon for at least 30 minutes (up to 2 hours) in the refrigerator. The longer the salmon marinates, the more flavorful it will be, but do not exceed 2 hours to prevent the fish from becoming too soft.

          Preheat your grill or oven (to 375°F/190°C) while the salmon marinates.

            If grilling, lightly oil the grates and place the marinated salmon skin-side down. Grill for about 4-5 minutes on each side, or until the salmon flakes easily with a fork. If baking, place the marinated salmon on a baking sheet lined with parchment paper and bake for 12-15 minutes.

              Once cooked, remove the salmon from heat and let it rest for a few minutes. Serve with a garnish of fresh herbs and a wedge of lemon or orange for extra zest!
