Ingredients

1 lb fresh salmon fillet, skin removed

2 cups fresh blueberries

2 tbsp honey

2 tbsp balsamic vinegar

1 tbsp soy sauce

1 tbsp olive oil

1 clove garlic, minced

1 tbsp fresh ginger, grated

1 tsp salt

½ tsp black pepper

1 head of butter or romaine lettuce, leaves separated

¼ cup cilantro, chopped (for garnish)

½ cup avocado, diced (optional)

Lime wedges (for serving)

Instructions

Prepare the Blueberry Glaze: In a small saucepan over medium heat, combine the fresh blueberries, honey, balsamic vinegar, soy sauce, garlic, and ginger. Cook for about 8-10 minutes, stirring occasionally, until the blueberries break down and the mixture thickens. Remove from heat and let cool slightly.

Cook the Salmon: Preheat your grill or a stovetop grill pan over medium-high heat. Season the salmon fillet with olive oil, salt, and black pepper. Place the salmon on the grill and cook for about 4-5 minutes on each side, or until it flakes easily with a fork. Remove from heat and let it rest for a few minutes.

Prepare the Lettuce Wraps: While the salmon is cooking, rinse and dry the lettuce leaves. Lay them out on a platter, ready for filling.

Assemble the Wraps: Flake the cooked salmon into bite-sized pieces and evenly distribute it among the lettuce leaves. Drizzle the blueberry glaze over the salmon, making sure each wrap gets a nice amount of sauce.

Add Optional Toppings: If desired, add diced avocado and sprinkle chopped cilantro over each wrap for an extra layer of flavor.

Serve: Squeeze fresh lime juice over the wraps before serving to enhance the flavors and add a zing. Enjoy your delicious Salmon Lettuce Wraps while they’re fresh!
