Roasted Veggie Tacos with Chipotle Crema

For the Roasted Veggies:

1 medium zucchini, diced

1 red bell pepper, chopped

1 cup corn kernels (fresh or frozen)

1 small red onion, sliced

1 teaspoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon cumin

1/2 teaspoon garlic powder

Salt and pepper to taste

8 small corn or flour tortillas

For the Chipotle Crema:

1/2 cup sour cream or Greek yogurt

1-2 tablespoons adobo sauce (from a can of chipotle peppers)

Juice of 1 lime

1 clove garlic, minced

Salt to taste

Toppings:

Fresh cilantro, chopped

Feta cheese or crumbled queso fresco (optional)

Lime wedges

Instructions
 

Preheat the Oven: Start by preheating your oven to 425°F (220°C).

    Prepare the Veggies: In a large mixing bowl, combine the diced zucchini, red bell pepper, corn kernels, and sliced red onion. Drizzle with olive oil and sprinkle in the smoked paprika, cumin, garlic powder, salt, and pepper. Toss until all the veggies are well coated in the seasoning.

      Roast the Vegetables: Spread the seasoned veggies evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for about 20-25 minutes, or until the veggies are cooked through and slightly caramelized, stirring halfway through to ensure even roasting.

        Make the Chipotle Crema: While the veggies are roasting, prepare the chipotle crema. In a small bowl, mix together the sour cream or Greek yogurt, adobo sauce, lime juice, minced garlic, and a pinch of salt. Adjust the heat level to your preference by adding more or less adobo sauce. Set aside.

          Warm the Tortillas: Just before the veggies are done, warm the tortillas. You can do this by placing them in a dry skillet over medium heat for about 30 seconds on each side or wrapping them in foil and placing them in the oven for the last 5 minutes.

            Assemble the Tacos: Once the roasted veggies are done, it's time to assemble your tacos. Start by layering a generous amount of the roasted veggies on each tortilla.

              Add Toppings: Drizzle the chipotle crema over the veggies, and add chopped cilantro and feta cheese if desired. Serve with lime wedges on the side for an extra zing.
