3 large sweet potatoes, peeled and cubed

1 head of garlic

2 tablespoons olive oil

1/4 cup unsalted butter, softened

1/2 cup milk or cream (adjust for desired creaminess)

Salt and pepper to taste

Fresh chives or parsley, for garnish

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the cloves and drizzle with about a teaspoon of olive oil. Wrap it tightly in aluminum foil and roast for 30-35 minutes until the cloves are soft and caramelized.

    Cook the Sweet Potatoes: While the garlic is roasting, place the cubed sweet potatoes in a large pot and cover them with cold water. Bring to a boil over medium-high heat and cook for 15-20 minutes or until fork-tender. Drain and set aside.
