2 whole bulbs of garlic

2 tablespoons extra virgin olive oil

1 large onion, diced

2 medium carrots, diced

2 stalks celery, diced

4 cups vegetable broth (or chicken broth for a non-vegetarian option)

1 cup heavy cream (or coconut cream for a dairy-free option)

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

Optional garnishes: croutons, fresh herbs (like parsley or chives), or a drizzle of olive oil

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Garlic: Slice the tops off the bulbs of garlic to expose the cloves. Drizzle 1 tablespoon of olive oil over the exposed cloves. Wrap each bulb individually in aluminum foil and place them on a baking sheet. Roast in the oven for about 30-35 minutes, until the garlic is soft and caramelized. Let cool slightly.

      Sauté the Vegetables: In a large pot, heat the remaining tablespoon of olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables are tender and the onion is translucent.

        Add the Roasted Garlic: Once the roasted garlic is cool enough to handle, squeeze the cloves from their skins into the pot with the sautéed vegetables. Use a wooden spoon to stir and combine.

          Add Broth and Seasoning: Pour in the vegetable broth and add the fresh thyme. Bring the soup to a gentle boil, then reduce the heat and let it simmer for about 15-20 minutes, allowing the flavors to meld together.

            Blend the Soup: Using an immersion blender, blend the soup until smooth and creamy. If you don’t have an immersion blender, you can carefully transfer the soup in batches to a countertop blender.

              Stir in the Cream: Lower the heat and stir in the heavy cream (or coconut cream). Allow the soup to heat through, but do not let it boil. Season with salt and pepper to taste.
