Roasted Garlic Mashed Cauliflower

Ingredients
  

1 medium head of cauliflower, cut into florets

1 whole head of garlic

2 tablespoons olive oil

½ cup unsweetened almond milk (or any milk of your choice)

3 tablespoons unsalted butter (or vegan butter)

Salt and pepper to taste

½ teaspoon onion powder

¼ cup freshly grated Parmesan cheese (optional)

Fresh chives or parsley for garnish

Instructions
 

Roast the Garlic:

    Preheat your oven to 400°F (200°C). Cut the top off the whole head of garlic to expose the cloves, drizzle with 1 tablespoon of olive oil, wrap in aluminum foil, and roast in the oven for about 30-35 minutes until soft and caramelized.

      Prepare the Cauliflower:

        While the garlic is roasting, bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 10-12 minutes, or until very tender. Drain and set aside.

          Blend the Ingredients:

            Once the garlic is roasted, squeeze the cloves out of their skins into a blender or food processor. Add the cooked cauliflower, remaining 1 tablespoon of olive oil, almond milk, butter, onion powder, salt, and pepper. If using, add the Parmesan cheese.

              Mash and Adjust Flavor:

                Blend until smooth and creamy. If the mash is too thick, add more almond milk a tablespoon at a time until your desired consistency is reached. Taste and adjust seasoning with more salt and pepper as needed.

                  Serve:

                    Transfer your roasted garlic mashed cauliflower to a serving bowl. Drizzle with a little extra olive oil, sprinkle with fresh chives or parsley for color, and serve warm.
