Roasted Garlic Corn Pizza

Ingredients
  

1 pizza dough (store-bought or homemade)

2 cups fresh corn kernels (or canned if unavailable)

1 head of garlic

2 tablespoons olive oil

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh arugula for garnish (optional)

Balsamic glaze for drizzling (optional)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the top off the head of garlic to expose the cloves. Drizzle with 1 tablespoon of olive oil and wrap in aluminum foil. Roast in the oven for about 30-35 minutes, until the cloves are soft and caramelized. Allow to cool slightly, then squeeze the roasted garlic out of the skins into a small bowl and mash with a fork.

    Prepare the Corn: In a skillet over medium heat, add the remaining tablespoon of olive oil. Add the corn kernels and sauté for about 5-7 minutes until they are tender and slightly golden. Season with salt and pepper to taste, and add the fresh thyme. Mix well and set aside.

      Preheat the Pizza Stone: Place a pizza stone in the oven and preheat to 475°F (245°C). If you don’t have a pizza stone, you can use a baking sheet.

        Assemble the Pizza: On a floured surface, stretch or roll out the pizza dough into your desired shape (10-12 inches in diameter). Transfer it to a pizza peel lined with parchment paper or directly onto the baking sheet. Spread the roasted garlic evenly across the base, leaving a small border for the crust.

          Add Cheese and Corn: Dollop the ricotta cheese evenly over the roasted garlic. Sprinkle the sautéed corn on top, followed by the shredded mozzarella and grated Parmesan. If you like heat, add the red pepper flakes at this stage.

            Bake the Pizza: Carefully slide the pizza onto the preheated pizza stone or place the baking sheet in the oven. Bake for 12-15 minutes, or until the crust is golden and the cheese is bubbling and slightly browned.

              Finishing Touches: Remove from the oven and let it cool for a minute. If desired, garnish with fresh arugula and drizzle with balsamic glaze for a touch of sweetness and acidity.
