Roasted Garlic and Broccoli Pita Pizza

4 whole wheat pitas

1 cup broccoli florets, steamed

1 head of garlic

3 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional)

1 cup shredded mozzarella cheese

½ cup feta cheese, crumbled

Salt and pepper to taste

Fresh basil leaves, for garnish

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with 1 tablespoon of olive oil, sprinkle with salt, and wrap it in aluminum foil. Roast in the oven for 30-35 minutes until the cloves are soft and caramelized. Let it cool slightly, then squeeze the softened cloves out into a bowl and mash with a fork.

    Prepare the Pita Base: While the garlic is roasting, lay the whole wheat pitas on a baking sheet. Brush each pita with 1 tablespoon of olive oil, then sprinkle with dried oregano, red pepper flakes (if using), and a pinch of salt and pepper.

      Assemble the Pizzas: Spread the roasted garlic evenly onto each pita, using about 1 tablespoon of the mashed garlic per pita. Evenly distribute the steamed broccoli florets over the garlic spread, then sprinkle with shredded mozzarella and crumbled feta cheese.

        Bake the Pita Pizzas: Place the baking sheet in the oven and bake for 10-12 minutes or until the cheese is bubbly and slightly golden.

          Finishing Touches: Remove from the oven and let cool for a couple of minutes. Garnish with fresh basil leaves before slicing into quarters and serving.
