Roasted Corn Avocado Salsa

Ingredients
  

2 cups fresh corn kernels (about 3-4 ears of corn)

1 ripe avocado, diced

1 medium red onion, finely chopped

1 medium tomato, diced

1 jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons olive oil

Salt and pepper to taste

1/2 teaspoon smoked paprika (optional)

Instructions
 

Roast the Corn:

    - Preheat your oven to 400°F (200°C).

      - Place the fresh corn kernels on a baking sheet. Drizzle with olive oil and sprinkle with a little salt and pepper.

        - Roast in the oven for 15-20 minutes, stirring occasionally, until the corn is slightly charred and golden. Remove from the oven and let it cool.

          Prepare the Vegetables:

            - While the corn is roasting, dice the avocado, tomato, and onion. Mince the jalapeño (adjust the amount based on your spice tolerance) and chop the cilantro.

              Combine Ingredients:

                - In a large mixing bowl, combine the roasted corn, diced avocado, chopped onion, tomato, jalapeño, and cilantro.

                  Dress the Salsa:

                    - Squeeze the juice of the limes over the mixture and drizzle with a bit more olive oil. Add smoked paprika if using. Season with salt and pepper to taste.

                      Mix and Chill:

                        - Toss gently to combine all the ingredients. Be careful not to mash the avocado too much. Taste and adjust seasoning if necessary.

                          - Transfer the salsa to a serving bowl and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
