Roasted Corn and Jalapeño Dip

2 cups fresh corn kernels (about 3-4 ears of corn or 1 can of corn, drained)

2 medium jalapeños, stemmed and seeded (adjust according to heat preference)

1 tablespoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

8 oz cream cheese, softened

1 cup sour cream

1 cup shredded sharp cheddar cheese

1/2 cup chopped green onions (plus extra for garnish)

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Corn and Jalapeños:

      - On a baking sheet, toss the corn kernels and jalapeños with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper.

        - Spread them out evenly and roast in the preheated oven for 20-25 minutes until the corn is golden and slightly charred, and the jalapeños are soft.

          Prepare the Dip Base:

            - In a large mixing bowl, combine the softened cream cheese and sour cream. Mix until smooth and creamy.

              - Add in the roasted corn and jalapeño mixture (reserve a small amount of corn for garnish), shredded cheddar cheese, chopped green onions, and lime juice. Stir until everything is well incorporated.

                Bake the Dip:

                  - Transfer the dip mixture into a greased baking dish.

                    - Sprinkle a bit more cheddar cheese on top for that cheesy goodness.

                      - Bake in the oven for an additional 20 minutes, or until the dip is bubbly and golden on top.

                        Garnish and Serve:
