Roasted Cauliflower Tacos

1 medium head of cauliflower, cut into bite-sized florets

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

8 small corn tortillas

1 cup red cabbage, finely shredded

1 avocado, sliced

1/2 cup fresh cilantro, chopped

1 lime, cut into wedges

Optional: 1/2 cup crumbled feta or cotija cheese

Optional: Hot sauce, to taste

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Cauliflower: In a large mixing bowl, combine the cauliflower florets with olive oil, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper. Toss well until all the florets are evenly coated with the oil and spices.

      Roast the Cauliflower: Spread the cauliflower in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is golden brown and crispy, tossing halfway through for even cooking.

        Warm the Tortillas: While the cauliflower is roasting, heat the corn tortillas in a dry skillet over medium heat until warm and pliable, about 30 seconds on each side. Wrap in a clean kitchen towel to keep warm.

          Assemble the Tacos: Once the cauliflower is roasted, assemble your tacos by placing a generous portion of the crispy cauliflower on each tortilla. Top with shredded red cabbage, avocado slices, and fresh cilantro.

            Garnish and Serve: Add crumbled feta or cotija cheese on top if desired. Serve with lime wedges and your favorite hot sauce for an extra kick. Enjoy immediately!
