Roasted Broccoli and Cauliflower Salad

2 cups broccoli florets

2 cups cauliflower florets

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup toasted almonds, roughly chopped

1 tablespoon fresh parsley, chopped (for garnish)

2 tablespoons balsamic vinaigrette

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Vegetables: In a large bowl, combine the broccoli and cauliflower florets. Drizzle with olive oil and sprinkle with garlic powder, paprika, salt, and pepper. Toss everything together until the vegetables are evenly coated.

      Roast the Veggies: Spread the broccoli and cauliflower mixture in a single layer on a baking sheet. Roast for 20-25 minutes, stirring halfway through, until the vegetables are tender and lightly charred.

        Mix Fresh Ingredients: While the vegetables are roasting, in a separate bowl, combine the halved cherry tomatoes and sliced red onion. Add the balsamic vinaigrette and toss to coat.

          Assemble the Salad: Once the broccoli and cauliflower are done, allow them to cool slightly. Then, in a large serving bowl, combine the roasted veggies with the tomato and onion mixture. Gently fold in the feta cheese and toasted almonds.

            Garnish and Serve: Sprinkle the fresh parsley on top for garnish. Serve immediately or let it chill in the fridge for 15-20 minutes for the flavors to meld.
