Reese's Cheesecake Bars

For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1/4 teaspoon salt

For the cheesecake filling:

2 (8 oz) packages cream cheese, softened

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup chunky peanut butter

1 cup Reese’s Peanut Butter Cups, chopped (divided)

For the topping:

1 cup heavy cream

2 tablespoons powdered sugar

Additional Reese’s Peanut Butter Cups for garnish

Preheat the Oven: Preheat your oven to 325°F (160°C). Line a 9x9-inch baking pan with parchment paper, leaving some overhanging for easy removal later.

    Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and salt. Mix until well combined. Press the mixture evenly into the bottom of the prepared baking pan. Bake in the preheated oven for about 10 minutes until lightly golden. Remove and set aside to cool.

      Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar, mixing well. Add in the eggs one at a time, mixing just until each is incorporated. Then, stir in the vanilla extract and chunky peanut butter until fully combined.

        Fold in the Reese’s: Gently fold in ¾ cup of the chopped Reese’s Peanut Butter Cups into the cheesecake batter.

          Combine and Bake: Pour the cheesecake filling over the cooled crust, spreading it evenly. Bake in the oven for 25-30 minutes, or until the center is slightly jiggly but not wet. Once done, remove from the oven and let cool at room temperature, then refrigerate for at least 4 hours or preferably overnight.

            Prepare the Topping: In a chilled mixing bowl, whip the heavy cream and powdered sugar together until stiff peaks form. Once the cheesecake bars have chilled, spread the whipped cream over the top.

              Garnish and Serve: Top the whipped cream with the remaining chopped Reese’s Peanut Butter Cups. Use the parchment paper to lift the bars out of the pan. Cut into squares and serve chilled.
