1 cup stone-ground grits

4 cups water or chicken broth

1 cup heavy cream

1 cup shredded sharp cheddar cheese

2 tablespoons butter

Salt and black pepper to taste

For the Cajun Cream Sauce:

1 tablespoon olive oil

1/2 cup diced onion

1/2 cup diced bell pepper (red or green)

2 cloves garlic, minced

1 cup heavy cream

1 tablespoon Cajun seasoning

1 tablespoon lemon juice

Salt and black pepper to taste

For the Seafood:

2 fillets of red snapper (about 6 ounces each)

1 cup shrimp, peeled and deveined

2 tablespoons Cajun seasoning

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare the grits: In a medium saucepan, bring water or chicken broth to a boil. Slowly whisk in the stone-ground grits, reduce heat to low, and cover. Stir occasionally for about 20-25 minutes, or until the grits are creamy and tender.

    Make the grits creamy: Once the grits are finished cooking, stir in heavy cream, shredded cheddar cheese, butter, salt, and black pepper. Keep warm over low heat while you prepare the seafood and sauce.

      Prepare the Cajun cream sauce: In a large skillet over medium heat, heat the olive oil. Add the diced onion and bell pepper, sauté until softened (about 3-4 minutes). Add minced garlic and cook for an additional minute.

        Develop the sauce: Pour in the heavy cream and Cajun seasoning, stirring continuously. Allow the sauce to simmer for about 5 minutes until it thickens slightly. Stir in the lemon juice, and season with salt and black pepper to taste. Remove from heat and set aside.
