Ingredients

1 cup jasmine rice

2 cups vegetable broth (or water)

2 tablespoons sesame oil

1 bell pepper, sliced (red, yellow, or green)

1 medium zucchini, thinly sliced

1 cup broccoli florets

1 cup snap peas

2 carrots, julienned

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon honey or maple syrup (optional)

1 tablespoon rice vinegar

2 green onions, chopped

Sesame seeds for garnish

Salt and pepper to taste

Instructions

Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a saucepan, combine the rice and vegetable broth. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes or until the liquid is absorbed and the rice is tender. Remove from heat and let it sit covered for 5 minutes.

Prepare the Stir-Fry: While the rice is cooking, heat the sesame oil in a large wok or skillet over medium-high heat. Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.

Add the Veggies: Toss in the sliced bell pepper, zucchini, broccoli, snap peas, and carrots. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp.

Create the Sauce: In a small bowl, whisk together the soy sauce, honey or maple syrup (if using), and rice vinegar. Pour the sauce over the cooked veggies, tossing to coat evenly. Cook for another minute to heat through.

Serve: Fluff the jasmine rice with a fork and divide it among serving dishes. Top with the veggie stir-fry mixture. Garnish with chopped green onions and a sprinkle of sesame seeds. Adjust salt and pepper to taste if needed.

Enjoy: Dig in and delight in the colorful medley of flavors and textures!
