Ingredients

12 oz spaghetti or your favorite pasta

2 cups cherry tomatoes, halved

3 cloves garlic, minced

1/4 cup fresh basil leaves, chopped

1/4 cup extra virgin olive oil

1 tablespoon balsamic vinegar (optional)

Salt and freshly ground black pepper, to taste

1/2 cup grated Parmesan cheese (optional)

1/4 teaspoon red pepper flakes (optional, for a bit of spice)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Drain, reserving about 1/2 cup of pasta water.

Prepare the Tomato Mixture: While the pasta is cooking, combine the halved cherry tomatoes, minced garlic, and chopped basil in a large mixing bowl. Add the extra virgin olive oil, balsamic vinegar (if using), and season with salt and pepper. Stir gently to combine.

Combine Pasta and Tomato Mixture: Once the pasta is cooked and drained, add it to the bowl with the tomato mixture. Toss everything together, adding reserved pasta water a little at a time until you reach your desired consistency of sauce.

Serve: Divide the pasta into serving bowls. Drizzle with additional olive oil if desired, and sprinkle with grated Parmesan cheese and red pepper flakes for an extra kick.

Garnish: Finish with a few basil leaves on top and serve immediately.
