Noodles:

8 oz rice noodles (or any noodles of your choice)

Peanut Sauce:

1/3 cup creamy peanut butter

1/4 cup soy sauce (low sodium recommended)

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon sriracha (adjust to taste)

1-2 tablespoons warm water (to thin the sauce if needed)

Vegetables:

1 cup shredded carrots

1 red bell pepper, thinly sliced

1 cucumber, julienned

1 cup snap peas or snow peas

3 green onions, sliced

Fresh cilantro or basil for garnish

Toppings:

Chopped peanuts

Lime wedges

Instructions
 

Cook the Noodles:

    - Bring a large pot of water to a boil. Cook the rice noodles according to package instructions until tender, usually about 4-6 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.

      Make the Peanut Sauce:

        - In a mixing bowl, combine the creamy peanut butter, soy sauce, honey (or maple syrup), rice vinegar, sesame oil, and sriracha. Whisk until smooth. If the sauce is too thick, add warm water a tablespoon at a time until you reach your desired consistency.

          Prepare the Vegetables:

            - While the noodles are cooking, wash and chop all vegetables: shred the carrots, slice the bell pepper, julienne the cucumber, and prepare the snap peas. Set aside.

              Combine Ingredients:

                - In a large mixing bowl, add the cooked noodles, peanut sauce, and all of the diced vegetables. Toss gently to ensure everything is well coated with the sauce.
