Ingredients

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup of low-sodium soy sauce

1/4 cup honey or maple syrup

2 tablespoons rice vinegar

2 tablespoons sesame oil

2 cloves garlic, minced

1 teaspoon freshly grated ginger (optional)

2 cups cooked white or brown rice

1 cup mixed vegetables (like peas, carrots, and corn)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions

Prepare the Chicken Marinade: In a large mixing bowl, combine the soy sauce, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, and grated ginger (if using). Stir until the ingredients are well combined.

Marinate the Chicken: Add the bite-sized chicken pieces to the marinade. Allow it to marinate for at least 15 minutes while you prepare the rice and vegetables. This can also be done ahead of time for even more flavor.

Cook the Rice: If you haven’t already, cook your rice according to the package instructions. You can use a rice cooker or stovetop method. Set aside once cooked.

Stir-Fry the Chicken: In a large skillet or frying pan, heat a tablespoon of oil over medium-high heat. Add the marinated chicken pieces (reserve the marinade) and cook for about 6-8 minutes, stirring frequently until the chicken is browned and cooked through.

Add the Vegetables: Toss in the mixed vegetables to the skillet with the chicken and stir-fry for an additional 3-4 minutes until the vegetables are tender and heated through.

Create the Sauce: Pour the reserved marinade into the skillet. Bring it to a simmer and let it cook for about 2-3 minutes until the sauce thickens slightly.

Assemble the Rice Bowl: In a serving bowl, spoon a generous amount of cooked rice. Top with the teriyaki chicken and vegetables.

Garnish and Serve: Sprinkle sliced green onions and sesame seeds on top for a fun and tasty finish.

Enjoy: Serve warm and watch your kids enjoy their delicious Teriyaki Chicken Rice Bowl!
