1 lb ground turkey

1 cup brown rice (uncooked)

2 cups low-sodium chicken broth

1 (15 oz) can black beans, rinsed and drained

1 cup corn (frozen or canned)

1 packet taco seasoning

1/2 cup diced tomatoes (fresh or canned)

1 small red onion, diced

1 bell pepper (any color), diced

1 cup shredded cheese (cheddar or Mexican blend)

1 avocado, sliced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Olive oil

Salt and pepper to taste

Cook the rice: In a medium saucepan, bring the chicken broth to a boil. Add the brown rice, cover, and reduce heat to low. Let it simmer for about 45 minutes, or until the rice is tender and has absorbed the liquid. Fluff with a fork.

    Sauté the vegetables: While the rice is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, sautéing until they’re soft, about 5-6 minutes.

      Brown the turkey: Add the ground turkey to the skillet with the vegetables. Cook until browned and fully cooked through, about 7-8 minutes. Drain any excess fat if needed.

        Season the turkey: Stir in the taco seasoning, canned diced tomatoes, black beans, and corn. Mix well and cook for an additional 5 minutes, allowing the flavors to meld. Season with salt and pepper to taste.
