Ingredients

1 lb (450g) flank steak, thinly sliced against the grain

1/4 cup soy sauce (low sodium recommended)

1/4 cup honey or maple syrup

2 tbsp rice vinegar

1 tbsp sesame oil

2 cloves garlic, minced

1 inch ginger, grated

2 cups cooked jasmine or brown rice

1 cup broccoli florets (fresh or frozen)

1 cup bell peppers, sliced (red, yellow, or green)

1/4 cup green onions, chopped (for garnish)

1 tsp sesame seeds (optional, for garnish)

Instructions

Marinate the Beef: In a medium bowl, combine soy sauce, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, and grated ginger. Whisk until well combined. Add the sliced flank steak to the bowl, ensuring every piece is well-coated. Let it marinate for at least 15 minutes (or up to 1 hour for more flavor).

Cook the Vegetables: In a large skillet or wok over medium heat, add a splash of oil. Once hot, add the broccoli florets and sliced bell peppers. Stir-fry for about 3-5 minutes or until the vegetables are tender yet crisp. Remove from the skillet and set aside.

Cook the Beef: In the same skillet, increase the heat to medium-high. Add the marinated beef (reserve any leftover marinade). Sear the beef for about 5-7 minutes, stirring occasionally, until it is cooked to your desired doneness. If using, pour in the reserved marinade during the last minute of cooking to thicken and glaze the beef.

Combine: Return the cooked vegetables to the skillet with the beef. Toss everything together until combined and heated through. Adjust seasoning to taste.

Serve: Divide the cooked rice among serving bowls. Top with the sweet teriyaki beef and vegetable mixture. Garnish with chopped green onions and sesame seeds if desired.

Enjoy! Your Quick Sweet Teriyaki Beef Bowls are ready to be enjoyed!
