1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1/4 cup Kalamata olives, pitted and sliced

1/4 cup feta cheese, crumbled (optional)

2 tablespoons fresh parsley, chopped

2 tablespoons olive oil

1 tablespoon lemon juice

1 teaspoon dried oregano

Salt and pepper, to taste

4 large whole-wheat wraps or tortillas

1 cup mixed greens (spinach, arugula, etc.)

Instructions
 

In a large mixing bowl, combine the drained chickpeas, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese (if using), and fresh parsley.

    In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper until well combined.

      Pour the dressing over the chickpea mixture and toss gently until all the ingredients are evenly coated.

        Lay out the whole-wheat wraps or tortillas on a flat surface. Place a handful of mixed greens in the center of each wrap.

          Spoon a generous portion of the chickpea salad mixture over the greens.

            Fold in the sides of the wrap, then roll it tightly from the bottom to the top, securing the filling inside.

              Slice the wraps in half or leave them whole, and serve immediately with extra lemon wedges or a side of hummus for dipping.
