1 can (15 oz) chickpeas, drained and rinsed

1 cup cucumber, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1 cup bell peppers (any color), diced

1/3 cup Kalamata olives, pitted and halved

1/2 cup feta cheese, crumbled

2 tablespoons fresh parsley, chopped

2 tablespoons fresh lemon juice

2 tablespoons extra-virgin olive oil

1 teaspoon dried oregano

Salt and pepper, to taste

Instructions
 

In a large mixing bowl, combine the rinsed chickpeas, diced cucumber, cherry tomatoes, red onion, bell peppers, and Kalamata olives.

    Add the crumbled feta cheese and chopped parsley to the bowl with the vegetables and chickpeas.

      In a small bowl, whisk together the lemon juice, olive oil, dried oregano, salt, and pepper until well combined.

        Pour the dressing over the salad mixture. Gently toss everything together until the ingredients are evenly coated with the dressing.

          Taste and adjust seasoning, adding more salt, pepper, or lemon juice if desired.

            Let the salad sit for 10 minutes to allow the flavors to meld before serving.

              Serve chilled or at room temperature, garnished with additional parsley if desired.
