Quick Lemon Garlic Shrimp and Broccoli Skillet

1 pound large shrimp, peeled and deveined

2 cups broccoli florets

4 cloves garlic, minced

1 medium lemon, zested and juiced

3 tablespoons olive oil

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cooked rice or quinoa (for serving, optional)

Instructions
 

Prepare the Shrimp: In a medium bowl, combine the peeled shrimp, lemon zest, lemon juice, red pepper flakes, and a pinch of salt and pepper. Mix to coat the shrimp, then let marinate for 10 minutes.

    Blanch the Broccoli: While the shrimp marinates, bring a pot of salted water to a boil. Add the broccoli florets and blanch for 2-3 minutes until vibrant green and slightly tender. Drain and set aside.

      Sauté Garlic: In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds or until fragrant, being careful not to burn it.
