Ingredients

2 salmon fillets (about 6 oz each)

4 cloves garlic, minced

2 tablespoons olive oil

1 lemon, zested and juiced

Salt and pepper, to taste

4 cups fresh spinach

1 teaspoon red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Marinate the Salmon: In a small bowl, combine the minced garlic, olive oil, lemon zest, and lemon juice. Season with salt and pepper to taste. Place the salmon fillets in a shallow dish and pour the marinade over them. Let it marinate for about 10 minutes while you prepare the spinach.

Cook the Spinach: In a large skillet over medium heat, add a splash of olive oil. Once hot, add the fresh spinach. Sauté for about 2-3 minutes, or until wilted. Season with salt, pepper, and red pepper flakes if using. Remove the spinach from the skillet and set aside.

Cook the Salmon: In the same skillet, add the marinated salmon fillets, skin side down (if applicable). Cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. The salmon should achieve a nice golden brown color.

Serve: Plate the sautéed spinach on two plates. Top with the cooked salmon fillets. Garnish with fresh parsley and serve with lemon wedges on the side for an extra zesty kick.
