1 lb (450g) ground beef

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

8 small corn or flour tortillas

For the fresh avocado salsa:

2 ripe avocados, diced

1 medium tomato, diced

1/4 red onion, finely chopped

1 jalapeño, deseeded and finely chopped (optional)

Juice of 1 lime

1/4 cup fresh cilantro, chopped

Salt, to taste

For toppings (optional):

Shredded lettuce

Grated cheese (cheddar or cotija)

Sour cream

Lime wedges

Cook the Beef:

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
