Quick Beef Tacos with Avocado Cream Sauce

Ingredients
  

1 lb ground beef

1 tablespoon olive oil

1 small onion, finely chopped

2 garlic cloves, minced

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon paprika

Salt and pepper, to taste

8 small corn or flour tortillas

1 cup shredded lettuce

1 medium tomato, diced

½ cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, for garnish

For the Avocado Cream Sauce:

1 ripe avocado

½ cup sour cream

Juice of 1 lime

Salt, to taste

Instructions
 

Prepare the Beef Filling:

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute.

      Cook the Beef:

        Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.

          Season the Beef:

            Stir in the chili powder, cumin, paprika, salt, and pepper. Mix well to combine. Reduce heat to low and let it simmer for a few minutes while you prepare the avocado cream sauce.

              Make the Avocado Cream Sauce:

                In a blender or food processor, combine the ripe avocado, sour cream, lime juice, and salt. Blend until smooth and creamy. Taste and adjust the seasoning if needed.

                  Warm the Tortillas:

                    In a dry skillet over medium heat, warm the tortillas for about 30 seconds on each side until pliable. You can also wrap them in aluminum foil and place them in a preheated oven at 350°F (175°C) for 10 minutes.

                      Assemble the Tacos:

                        Place a couple of tablespoons of the beef mixture onto each tortilla. Top with shredded lettuce, diced tomato, and shredded cheese.

                          Drizzle with Avocado Cream Sauce:

                            Add a generous drizzle of the avocado cream sauce on top of the filled tacos. Garnish with fresh cilantro.
