1 lb ground beef (preferably lean)

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

8 small corn or flour tortillas

1 ripe avocado, diced

1 cup fresh salsa (store-bought or homemade)

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Cook the beef: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent (about 3-4 minutes).

    Brown the ground beef: Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, breaking it apart with a spoon, about 5-7 minutes.

      Season: Mix in the chili powder, cumin, smoked paprika, salt, and pepper. Stir well to coat the beef evenly. Let it cook for another 2-3 minutes to let the spices meld with the meat.

        Warm tortillas: While the beef is cooking, heat the tortillas. You can do this by placing them in a dry skillet over medium heat for about 30 seconds on each side or wrapping them in foil and warming them in the oven at 350°F (175°C) for about 10 minutes.
