Quick Beef Stir-Fry with Bell Peppers

1 lb (450g) beef sirloin, thinly sliced against the grain

1 medium red bell pepper, sliced into strips

1 medium yellow bell pepper, sliced into strips

1 medium green bell pepper, sliced into strips

3 cloves garlic, minced

1-inch piece of ginger, minced

3 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 teaspoon sesame oil

Salt and pepper, to taste

2 green onions, chopped (for garnish)

Cooked jasmine rice or noodles (to serve)

Instructions
 

Marinate the Beef: In a bowl, combine the sliced beef, soy sauce, oyster sauce, cornstarch, and a pinch of salt and pepper. Toss well to coat the beef evenly. Let it marinate for about 15 minutes while you prepare the vegetables.

    Prepare the Veggies: While the beef marinates, wash and slice the bell peppers into thin strips. Also, mince the garlic and ginger.

      Heat the Oil: In a large wok or skillet, heat 2 tablespoons of vegetable oil over medium-high heat until hot but not smoking.

        Stir-Fry the Beef: Add the marinated beef to the hot oil in a single layer, ensuring that it browns nicely. Stir-fry for about 2-3 minutes until the beef is cooked through. Remove the beef from the skillet and set aside.

          Sauté the Vegetables: In the same skillet, add another tablespoon of oil if needed. Toss in the minced garlic and ginger, frying them for about 30 seconds until fragrant. Add the sliced bell peppers, stirring frequently, for about 3-4 minutes until they are tender-crisp.

            Combine Everything: Return the cooked beef to the skillet with the vegetables. Drizzle the sesame oil over the stir-fry, tossing everything together. Cook for an additional minute to warm through and meld the flavors. Taste and adjust seasoning, if necessary.

              Serve: Remove from heat, and transfer the stir-fry to a serving plate. Garnish with chopped green onions. Serve immediately over cooked jasmine rice or noodles.
