1 cup canned pumpkin puree

1/2 cup warm water (about 110°F)

2 tablespoons honey or maple syrup

1 tablespoon olive oil

1 teaspoon vanilla extract

2 cups spelt flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon sea salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/2 cup chopped walnuts

Optional: sesame seeds or pumpkin seeds for topping

Prepare the Dough: In a large bowl, combine the warm water, honey (or maple syrup), olive oil, and vanilla extract. Stir until well mixed.

    Mix Dry Ingredients: In another bowl, whisk together the spelt flour, baking powder, baking soda, sea salt, cinnamon, nutmeg, and ginger.

      Combine Wet and Dry: Gradually add the dry ingredients into the wet mixture, stirring until just combined. Be careful not to overmix as this can affect the texture of the bread.

        Add the Pumpkin & Walnuts: Fold in the canned pumpkin puree and chopped walnuts, ensuring a uniform distribution throughout the dough.
