1 cup mashed ripe bananas (about 2 medium bananas)

1 cup pumpkin puree (canned or fresh)

1/4 cup honey or maple syrup

1/4 cup coconut oil (melted) or unsalted butter

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour (or whole wheat flour for a healthier option)

1/2 cup chia seeds

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup chopped nuts (walnuts or pecans) - optional

1/2 cup chocolate chips - optional

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan, or line it with parchment paper for easy removal.

    Combine Wet Ingredients: In a large mixing bowl, mix the mashed bananas, pumpkin puree, honey (or maple syrup), melted coconut oil, eggs, and vanilla extract until well combined.

      Mix Dry Ingredients: In another bowl, whisk together the flour, chia seeds, baking soda, baking powder, cinnamon, nutmeg, and salt.

        Incorporate Dry Into Wet: Gradually add the dry ingredient mixture to the wet mixture. Stir until just combined. Avoid over-mixing, as this can make the bread dense.

          Fold In Extras: If desired, fold in the chopped nuts and chocolate chips for extra flavor and texture.

            Pour & Bake: Pour the batter into the prepared loaf pan. Smooth the top with a spatula to even it out.

              Bake: Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean. If the bread is browning too quickly, you can tent it with foil halfway through baking.

                Cool: Once baked, remove the bread from the oven and let it cool in the pan for 10-15 minutes. Then, transfer it to a wire rack to cool completely.
