Ingredients

1 ripe pineapple, peeled, cored, and diced

1 ripe mango, peeled and diced

1 red bell pepper, finely chopped

1 small red onion, finely chopped

1 jalapeño, seeded and minced (adjust based on heat preference)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

Salt and pepper, to taste

Optional: 1 avocado, diced for creaminess

Instructions

In a large mixing bowl, combine the diced pineapple and mango. Stir gently to mix.

Add the finely chopped red bell pepper, red onion, and jalapeño to the bowl. Mix them in carefully, ensuring the fruit remains intact.

Toss in the chopped cilantro and squeeze the juice of the limes over the mixture. Stir well to combine all the ingredients.

Season the salsa with salt and pepper to taste. If you're adding avocado, gently fold it in at this stage to keep it from mashing.

Allow the salsa to sit at room temperature for about 30 minutes to let the flavors meld together. If making ahead, cover and refrigerate until ready to serve.

Serve chilled or at room temperature with tortilla chips, grilled fish, chicken, or as a topping for tacos.
